Bernie’s Barmy Banana Muffins
Every expedition needs a token Pom to hang stuff on, and our Bernie’s a bone fide import from the ‘Old Dart’. He came into the kitchen the other day and said he’d found a couple of black bananas behind his seat in the ute and, giggling, asked if we could use them. “Of course”, we said. “Watch this.” - 2 cups of plain flour
- 4 teaspoons of baking powder
- 1 teaspoon of cinnamon powder
- ¼ cup of sugar
- ¼ teaspoon of salt
- 1 egg
- 1 cup of milk
- ¼ cup of melted butter or oil
- 2 ripe bananas
Sift the flour and baking powder cinnamon and add the sugar and salt. Make a well in the mix. Add the wet ingredients and beat thoroughly. Fill a tray of muffin moulds no higher than two thirds and put them into a medium hot oven and cook for 15 to 20 minutes. This recipe makes 12 muffins. These really need to be washed down with a posh coffee; you know, such as a latte mochachino. Camp Cooking with Macca, as featured in Campertrailer Australia issue 11, August-September 2007.
