Mount Gambier Pea and Ham Noodle Soup Bookmark and Share

As the temperature starts to drop and as we head further into Autumn, there is nothing better than a lovely hot soup to warm the belly.

You simply can’t go past this chunky dish from Eva Stovern- author of Caravan Chef – Around Australia with 30 ingredients. Make sure you try making this one, it’s a meal in itself and will leave you warm and content.

  • 1 tablespoon chicken stock powder
  • 4 cups hot water
  • 2 teaspoon olive oil
  • 1 small onion, finely chopped
  • 150g sliced smoked ham, diced
  • 1 cup mini penne or short pasta
  • ½ cup freeze-dried peas

Dissolve the chicken stock powder in the hot water.

Heat the oil in a saucepan and sauté the onion on a medium heat 2 minutes, or until soft but not brown.

Add the ham and sauté 2 minutes.

Add the liquid stock, pasta and peas and bring to a boil. Lower the heat and cook on a medium heat, stirring occasionally, for 7 minutes, or until the pasta and peas are tender.

Season to taste and serve.
