Pacific Palms Potato Pancakes
Eva Stovern author of the Caravan Chef is travelling at the moment but is never too busy to suggest one of her fantastic recipes for Discover Downunder, this one is yet another tasty treat that the whole family will enjoy both making and eating.
40 min cooking time You’ll need: - 4 medium potatoes, finely grated
- 1 medium onion, finely chopped
- 3 tablespoons plain flour
- 2 eggs, lightly beaten
- Salt to taste
- 1 teaspoon olive oil
Method: Combine the grated potatoes, chopped onion, flour, eggs and pinch of salt in a mixing bowl. Heat the oil in a frying pan until a drop of potato mixture added to it sizzles. Please heaped table spoon of the potato pancake mixture into the pan. Flatten each potato pancake and fry on a medium heat for 1 – 2 minutes, or until the base is set and golden brown. Flip the potato pancakes and fry other side until also golden brown and cooked through. Season to taste and serve. Serves 2 people Double recipe to feed the family
